Quinoa & Herb Salad

Ingredients

  • 1 cup of cooked quinoa
  • 1 handful of mixed leaves (mint, parsley & coriander)
  • 2 spring onions
  • 2 garlic cloves
  • ¼ cup pine nuts
  • juice of half a lemon
  • salt / pepper/ sumac / olive oil

 

Directions

  1. Cook the quinoa and set aside.
  2. In a bowl mix all the ingredients.
  3. Add lemon juice, salt, pepper and olive oil.
  4. Stir everything together and serve!
